Papaya Salad

Lots of work but worth it

You may be wondering what a papaya salad recipe is doing on a website called Amazing Marriage. It’s because, in our 50+ years of being married, we have had a division of labour and I usually stay out of the kitchen.

One of the lessons of the Amazing Marriage course is devoted to Respect. These days, when Linda needs help doing something complex such as a papaya salad, I jump in to help. It’s because I practice having a great deal of respect for Linda.

Now let’s get started with the Papaya Salad.

Salad ingredients

1 Head Romaine lettuce ripped up into bite-size pieces

1 Ripe papaya cut up into bite-size pieces

1 Avocado cut up into bite-size pieces

Half a red onion sliced very thinly

Dressing ingredients

Sugar, a 1/4 to 1/2 cup

Dry mustard, 1/2 t

Salt, 2 t

Papaya seeds, 2 T.

White wine vinegar or tarragon vinegar, 1/2 cup

Salad oil, 1/2 cup

2 green onions, finely chopped

Papaya Salad Dressing Preparation

Use one of your small electric appliances to grind the papaya seeds into tiny pieces. We used our Vitamix. Then we added the rest of the dressing ingredients and mixed them thoroughly with our Vitamix. We poured it into a small pitcher.

Finishing off the Papaya Salad

We took the 4 salad ingredients and mixed them thoroughly in a large bowl and added the dressing from the small pitcher.

As we were eating, I told Linda that this was one of the most delicious meals I’ve had all year. So, let me tell you what we had besides papaya salad.

Linda cooked up 2 pork chops with a can of mushroom soup. She boiled a few potatoes. We used the mushroom soup as gravy and ate one of most delightful combinations of tastes I’d had for a long time.
